Ingredients
  • 1handful cous cous
  • adash Tamari
  • 1handful baby spinach leaves
  • 1/2handful cherry tomatoes
  • 1/2handful red pepper
  • 1/2 handful cucumber
  • 2tbsp borlotti bean hummus
  • 1handful sprouted alfalfa
  • 2tbsp toasted seeds
  • asplash perri perri sauce
  • adrizzle extra virgin olive oil
Instructions
  1. Boil some water
  2. Put the cous cous in a small flat based bottom dish.
  3. Pour the tamari over the cous cous.
  4. Pour enough boiling water over the cous cous to just cover it. Then cover the dish with a clean tea towel making sure it is not touching the water and leave it to do it's thing.
  5. Chop the tomatoes, pepper and cucumber into bite-size chunks.
  6. Gather the rest of the ingredients.
  7. By this time the cous cous should have absorbed all the water.
  8. Fork through the cous cous and put it in your serving bowl.
  9. Add the spinach, cucumber, tomatoes, pepper, hummus, alfalfa, peri peri, toasted seeds and finally drizzle with oil.
