Pour an inch of water into a heavy based saucepan and put it on a medium heat on the hob.
Squeeze some Lemon into the saucepan.
Peel and core the apples one at a time, chopping them into roughly inch size pieces and put them straight into the saucepan when you've chopped them (this will prevent them turning brown).
Simmer the apples for 20 minutes adding the strawberries after 15 minutes if they were frozen.
They will be ready when they are soft, you may need to top up with a little water along the way.
Whizz them up in a blender or mixer.
If you prefer seedless leathers sieve the mixture, then pour it on a dehydrator mat.
Dehydrate for 11 hours on 135 degrees.
Cut them in strips and wrap in grease proof paper.
Put them in a jar and they will keep for a few months.
