Milk Chocolate Lavender Mousse

Ingredients
  • 4oz milk chocolate
  • 2 eggsseperated
  • 2oz caster sugar
  • 1/4pint double cream
  • 1teaspoon dried lavenderplus a little to garnish
  • A little chocolateto grate over the top
Instructions
  1. Break the chocolate into chunks and either melt in the microwave or in a bowl over a pan of hot water.
  2. Beat in the egg yolks and sugar.
  3. Allow to cool.
  4. Whip the cream until thick and fold into the chocolate mixture.
  5. Whisk the egg whites until stiff and fold into the chocolate mixture.
  6. Add a teaspoon of dried lavender.
  7. Pour into individual dishes and leave in the fridge to set.
  8. To serve grate some chocolate over the top and scatter with a little lavender.
