Ingredients
- 1 handful cous cous
- a dash Tamari
- 1 handful baby spinach leaves
- 1/2 handful cherry tomatoes
- 1/2 handful red pepper
- 1/2 handful cucumber
- 2 tbsp borlotti bean hummus
- 1 handful sprouted alfalfa
- 2 tbsp toasted seeds
- a splash perri perri sauce
- a drizzle extra virgin olive oil

Instructions
- Boil some water
- Put the cous cous in a small flat based bottom dish.
- Pour the tamari over the cous cous.
- Pour enough boiling water over the cous cous to just cover it. Then cover the dish with a clean tea towel making sure it is not touching the water and leave it to do it's thing.
- Chop the tomatoes, pepper and cucumber into bite-size chunks.
- Gather the rest of the ingredients.
- By this time the cous cous should have absorbed all the water.
- Fork through the cous cous and put it in your serving bowl.
- Add the spinach, cucumber, tomatoes, pepper, hummus, alfalfa, peri peri, toasted seeds and finally drizzle with oil.
