I’ve made quick notes below in case it ever disappears from the BBC site. I have had to change cook time and temperature as the first one burnt at 180c fan.

Lemon Drizzle Cake

  • 225 g butter
  • 225 g caster sugar
  • 4 eggs
  • 1 finely grated lemon zest
  • ************ *********** ***********
  • 1 1/2 juice of lemons
  • 85 g caster sugar
  • 225 G Self raising flour

  • 225 g butter
  • 225 g caster sugar
  • 4 eggs
  • 1 finely grated lemon zest

  • 1 1/2 juice of lemons
  • 85 g caster sugar
  • 225 G Self raising flour
Instructions
  1. Heat oven to 190c beat the butter and sugar together, add the eggs, sift in flour add lemon zest, mix.
  2. Put mixture into lined baking tin.
  3. Bake for 45-50 minutes (took longer for me). When the skewer comes out clean take the cake out and allow to cool.
  4. Mix together lemon juice and sugar for the drizzle.
  5. With the cake still in the tin, prick it all over with a skewer, then pour over the drizzle and leave to completely cool.
